Share a little about the ingredients and techniques used to create this dish/item. storebought wonton skins (Happy Boy brand, green package, frozen), shrimp and scallion filling, chicken broth

What are you most proud of? the nurse's cap wontons - they looked best and were actually easiest to shape

What advice would you give someone starting this project? The filling turned out too salty for my taste (though otherwise delicious). If you have a palate that is sensitive to salt you might want to use less of it for the filling. But only if your broth is a bit on the salty side as well since that will add up. For the fried version, the amount of salt was just perfect. The Happy Boy wonton skins I got are not exactly square (not good for triangles) but taste well and are nicely chewy.
