Share a little about the ingredients and techniques used to create this dish/item. pasteurized creamline cow's milk from the local dairy

The only goat's milk I could find, short of committing to a seasonal share, was ultra pasteurized, but I really wanted chevre. So when My daughter wanted to visit a farm (quite randomly) we went to the local dairy and got the best cow milk possible and made faux chevre! There is some flavor difference, but it is delicious!
