Artisan Bread Making »
InstructionsI think I may have broken every rule, but I'm a fly-by-the-seat-of-my-pants type of gal. I even put them in the oven way before they were done proofing, because I was late for a meeting. People were still amazed at the taste, so I guess Mr. Reinhart is right about the old dough adding something to the character of the new dough. I wish I'd tried some now.

The same as my last project. I had these two shaped as large batards and placed in my refrigerator overnight. When I took them out this morning, they had over risen, and so I reshaped them. I'm sure I broke all the rules, but everyone raved about the taste. What the heck. Right?!
What was your inspiration?
I like to share what I make, and I was going to a meeting. That's a whole room full of potentially hungry people!
What are you most proud of?
I don't really know what I'm the most proud of, I just know that this is a ton of fun!
What advice would you give someone starting this project?
This project couldn't have been easier. I used dough that I'd already made from the day before (or was it the day before that). I reshaped it because it has over risen and was a bit of a mess frankly. I had fun using the scissors to cut the dough, and I was in too much of a hurry to do anything more than a boule with the other one. Therefore, the advice I would give is to go for it, and have fun!
