What was your inspiration?
I've been making fondant sculptures for a year, as cupcake and cake toppers so I decided to try my hand at actual cake decorating. I picked a dolly varden cake for a workmate's birthday and as a joke because dolly vardens are so 1970s. But it turned out to be epic coz it was 4 days in the making - day 1 to bake, day 2 to layer and fill, day 3 to ice with ganache, day 4 to decorate with fondant.
What are you most proud of?
This is my first fully decorated cake. I've made cake toppers and decorated cupcakes but this is my first attempt at baking and decorating a full sized cake.
What advice would you give someone starting this project?
Make sure your ganache is as smooth as you can make it. Hubby helped by applying his cement rendering skills to apply 2 layers of very smooth ganache. This way I only needed to cover the cake with a thin layer of fondant. You don't want your fondant layer too thick coz fondant doesn't taste all that great. If your base ganache layer is not smooth, any bumps and flaws will show through the fondant.
