Most people associate crepes with French cooking. But they also star in many traditional dishes from Abruzzo, the mountainous region of central Italy where my family is from. This soup is one of my all-time favorites, both delicate and rustic. Don't be intimidated by making crepes. It's pretty simple, as you'll see in the class. Let me know if you make it and please post your pictures!

Ta-dah. To a keen eye, the crepes are too thick. As you suggest in the video, use a 1/4 measuring cup. I had just lost mine to the garbage disposal the day before, which I blame for pouring too much batter in the pan. The crepes are very forgiving though and even with a little tear here and there still turn out pretty. This dish can be served at an elegant dinner party or for a Saturday family lunch. The broth is very rich and flavorful due to the beef bones. Brilliant touch. My cousin from Abruzzo told me that in her village the broth is made from a sheep's head. Any thoughts on that?

Helen, this is the first I've heard of broth in Abruzzo being made from a sheep's head. This is one reason why I am so fascinated with the region. No matter how many times I"ve been there, there is always something new to learn about the food. I would have thought such a broth would be too strong for such a delicate soup. I guess I need to go back to research. Thanks for that interesting tidbit. Great job with your soup.

My family made crepes, we called them "Bannao's' Coat with good red sauce a little cheese, roll up and bake :)

That sounds good Mario. I sometimes make crepes in place of cannelloni. I stuff them with cheese and zucchini or mushrooms, top with tomato sauce and parmigiano cheese and bake ~ similar to what you do. Delizioso!
