What advice would you give someone starting this project? These are addictive! I would try using fish sauce instead of the salt for next time.

Looking good - if you use the fish sauce be careful to bake them at a lower temperature (300 F) so there is time for the fish sauce to dehydrate and coconut to get crispy before browning. Soon entering the market is dried fish sauce powder and fish salt - wither would be excellent. I have also added a touch of citric acid powder for a hot-sweet-sour flavor before.
