Dobos Torte
Cake
Oven 350
2 1/2 sheet trays - lined with parchment and greased with butter.
6 ounces almond paste
4 ounces sugar (1/2 cup +1 tablespoon)
6 ounces egg yolks
6 ounces cake flour ( 1 1/4 cup = 1 tablespoon)
pinch salt
4 eggs whites
3 Tablespoons sugar
Chocolate Buttercream
1 3/4 cups sugar
1 tablespoon corn syrup
1/3 cup water
5 egg yolks
24 ounces butter (6 sticks)
1 1/2 teaspoons vanilla extract
7 ounces semi sweet chocolate - melted and cooled
Caramel
1 1/3 cups sugar
2 ounces water
2 tablespoons butter
Garnish: 8 ounces sliced almonds - lightly toasted
Cake:
1. In the mixer with the paddle attachment on low speed combine the almond paste and the sugar for about 2 minutes.
2. Add the yolks and mix for about 4 minutes on medium speed until the whole mixture is pale yellow and ribbon-like.
3. Beat the egg whites to soft peaks add the sugar and beat until medium peaks.
4. Fold about 1/4 of the egg whites into the yolk mixture to lighten it and then add the rest.
5. Sift the flour over the egg mixture.
6. Divide the batter in half and spread between the 2 pans.
7. Bake at 350 until the cake looks very lightly toasted - it should test clean in the center with a skewer but not but too dark in color.
8. Let cool. Cut 6-7 6"rings out of the cake.
Buttercream:
1. Place the egg yolks in the mixer fitted with the whisk attachment. Turn the mixer on to low speed.
2. Cool the sugar, water and corn syrup to 240 degrees.
3. Pour the syrup into the mixer onto the moving egg yolks - be careful not to hit the whisk - aim for between the whisk and the sides of the mixer bowl.
4. Once all the syrup is in, turn the mixer up to medium high and mix until the mixer bowl is cool to the touch.
5. With the mixer on medium speed - throw in small chunks of butter until the butter is all gone.
The mixture should look like mayonaise - thick and fluffy.
6. Add the melted and cooled chocolate.
7. Begin to build your layers - put one layer aside for the caramel topping.
8. Layer cake and buttercream - starting with cake and ending with buttercream.
10. Ice the sides of the cake with buttercream.
9. Press toasted sliced almonds on the sides of the cake.
11. Make caramel topping and pour over the reserved layer.
Caramel Layer
1. Cook sugar and water in a medium sized saucepan until it is the color of clover honey. Do not stir it because the sugar could crystallize, Instead swirl the pot the even out the color.
Be careful caramel is hot.
2. Remove from heat - add the butter.
Let the caramel set up for a few minutes. Butter a sharp knife and cut the caramel layer into 6 even wedges.
Arrange on the top of the cake.

Be careful - caramel is hot.
This is a fairly complicated cake - it needs a demo.
