Share a little about the ingredients and techniques used to create this dish/item. Greek Christmas bread from Peter's excellent book, The Bread Baker's Apprentice. This is the Christopsomos variant with orange/honey glaze. For fruit, I used golden raisins and dried cranberries. This bread can be made with poolish or barm (sourdough starter) - this particular bread is made with barm. You cannot believe how fantastic the house smells with this bread is baking!

BTW - this made AWESOME French toast the next day. Between the fruit, the glaze and the sourdough barm starter, this bread is keeping very well on the countertop - very moist. Can't say how it will be 'long term' as it will pretty much disappear by tomorrow at the latest. Makes a delicious breakfast or snack with a little cream cheese, too. Another fantastic bread from Peter's Breadbaker's Apprentice book!
