The Bride...told me what she dreamed her cake would look like and I created it.

What are you most proud of?

The chocolate roses...they were really beautiful...all 45 of them!

What advice would you give someone starting this project?

Learn how to use gum paste and fondant, as well as learn how to handmake flowers. SO MUCH FUN!!!

Awesome pipping and your roses look great. My questions are... Is the border edible or just ribbon...as far as your roses you mentioned to follow the instructions in a book and practice. Do you make your roses by each pedal or with a cutter...I know there are many different ways to where a decorator may feel comfortable. Also with this much feedback, if you don't have one already a YouTube channel would be awesome showing others the basics because I, myself have taken classes where I am certified but bc I don't decorate as much anymore I find that making the fondant as flawless as your picture takes time, so does techniques to which ppl may freeze their cakes prior to butter cream, if they use store bought which I personally like satin ice or occasionally making MMF. I have to say, I am floored by the response to this cake...but for those of you who follow this and to those of you who have recently written, here is how I did this cake. First, the question about the ribbon at the bottom of each cake,. I have a pasta machine with a motor. I mixed chocolate fondant with gum paste, LOTS of it. I put it through the pasta machine which was on a long table and after It covered the table from one end to the other, I took a yard stick, measured how wide the ribbon was to be, sliced it with a stylus, put a thin line of fresh icing at aottom of each cake and laid the ribbon against it. If you get used to handling fondant and gumpaste, it gets easier and easier to handle. My first experience with fondant was on a 14" round cake...I rolled it out, slide it onto a cake board but forgot to dampen the icing on the cake so when I slid the fondant onto the cake, because I was nervous and shaking too, the fondant slid OFF the cake and onto the floor. From then on, I made myself relax, rolled out a new piece, sprayed the cake with a mister and this time the fondant stayed and I learned TONS. OK, now for the roses. First I made litle pear shapes of the fondant/gum paste, dampened the tip of a toothpick, slid the heavier side of the little pear onto the toothpick and placed the pointed side of the toothpick into some styrofoam. I made probably 60 of these and let them dry overnight. The next day I again put wide stripes of the chocolate/gumpaste through my pasta machine and cut out circles that later I overlaid on the little pear and continued to build until my rose was made. The finished project had 45 roses which were still on the toothpicks...which I then pushed into a HALF BALL of styrofoam until what you see on the photo was finalized. After I got to the wedding, and set that half ball of roses on the top cake, I then had extra roses which I used to fill in at the bottom of that "ball". The little butterflys...some years ago there was a lady who had a wonderful business making rubber molds and she also had specific cutters with rubber molds to go with them (ie, for shaping tulips, etc), and I have to tell you I spent several thousand dollars over about a year, getting them. They are right now in storage and I hope when it is time to get them out and use them again, they aren't unusuable. Anyhow, for the roses I used her little heart cutter and another cutter probably the size of a quarter and a half dollar for the rose petals. I got so good at making the roses, I actually started making all other types of flowers...but when I moved to Houston, people here didn't want to spend money on hand made flowers which is why I packed everything. I do not use store bought icing...I took Wilton's basic icing recipe and played with it until I came up with something people liked. I work right now at a supermarket and the icing they buy comes in a 50 pound square...but it is actually delicious except, it never crisps so I cannot, when I do cakes, use Viva towels to smooth it. Sadly it is too "wet". The icing I use when I'm making my own, crisps so when it is ready, I use Viva towels and get a "fondant" look. The only time I freeze my cakes is when I take them out of the oven, and after they are cool, I even off the top, flip it out of the pan and put it into the freezer to "flash freeze". My used to be routine was purchase what I needed for the week on Sunday, bake Monday and Tuesday, fill and crumb on Wednesday and finalize on Thursday and Friday. OOPS forgot to finish about the butterflys...I pressed chocolate fondant into the mold, then pulled the wings up and had them dry against whatever was holding them up...I made a bunch of them too since they were so fragile. Hope again, I have inspired those interested in this fun and profitable business. Some of you may live in States that have that new Cottage Food law...but BE CAREFUL. The health departments are lying in wait to close anyone they can..

Every single wonderful caring person who has loved this particular cake, I thank you. I am a bakery manager at a supermarket and believe it or not, never get to do this anymore. MISS it but am thrilled you all love it. Funny too. The bride didn't want me to make her cake but, her then soon to be brother-in-law and I had worked a long time together when I lived in Charleston SC. When she first left a message for me to call her, I replied I didn't live there anymore. She responded he had instructed her to call me and she was ONLY to have me do the cake. Even when I took her order, I could feel she had wanted another popular cake designer here in Houston to do the cake but went along with me because of her brother-in-law. As I was finalizing setting up the cake and table (another specialty of mine), I head OH MY GOD, LOOK AT MY CAKE...IT"S GORGEOUS!!! and turned to see the now thrilled bride. They loved their grooms cake too...a very large horseshoe (heh, this IS Texas), and she began to order cakes from me. Unfortunately, I had a problem with fairly new partners, had to close the business and wound up going to work for a grocery store and had to turn her and many others away. This photo is a lovely reminder of a wonderful time in my life. I'm learning to quilt now and the quilts I've made so far are wonderful as well...so I'm probably going to be doing quilting as a business soon...plus, there are things I did for my cake designs, I've actually been using to make appliques. HUM...maybe my original art really was the gift of learning necessary for my new ADventure. BLESS YOU ALL again. SO appreciated. My work is gorgeous...YOUR work is incredible...wish I were still doing this but you are on your way to $$$...very proud of you...LOVED the yellow Calla Lilly Cake with initials...and thank you for your appreciation too. I'm a bakery mgr at a supermarket now because my partners were more interested in taking the money and not helping so this was my last wedding cake...MISS IT VERY MUCH but have taken up quilting and am surprisingly doing some things on my quilt (just started my first one), that I've done on cakes....some day when it is done, I'll share but at least for now, it is filling the void that missing doing my cakes has created. So sweet to write me...I very much love that so many are enjoying this cake. I've been cake decorating since the early 1980's and this was the last cake I did when I walked away from horrid partners.
