Oranges Grapefruit Meyer Lemon
What was your inspiration?
I live in a major citrus-producing region, and I get a lot of free oranges, lemons, and grapefruit from friends and neighbors. I found this recipe online while looking for a way to put all of this fruit to use.
What are you most proud of?
Being patient (the process of candying using this method takes 2 weeks) and remembering to add sugar everyday!
I'm also proud that friends and family really liked the candy. Everyone thought it would taste like that soft, gel-like candy, but really appreciated the taste of real fruit.
What advice would you give someone starting this project?
Cut the citrus thin. I've done two batches, and the first (thinner cut fruit) batch was better. I cut the fruit to about 3/16" thickness the first time, and about 1/4"-5/16" the second time. I was also better at tempering the chocolate the first time. I plan to invest in a digital candy thermometer for my next batch.
