What are you most proud of?
There are no tears in the cheese.
What advice would you give someone starting this project?
The instructions in the book, the materials, and the video do not always match. I found that 1x the recipe made two molds, but had a big problem when they only shrank about a third even after 12 hours, not the 2/3 or 3/4 shown in the video. I think it made more than expected too. I gave up and sliced the molded cheese into thirds.
