You can use any kind of cheesecake. Scoop it out, roll it in balls, put a lollipop stick in it and freeze it. Melt chocolate and dip the frozen cheesecake pops in it. At this point you can sprinkle them with sprinkles or leave them plain. Allow chocolate to harden before serving.Difficulty:
