APPLE CUPCAKES (makes 15 cupcakes)--- 1/2 cup unsalted butter, room temp. 1/2 cup sugar. 1/3 cup packed brown sugar. 2 eggs. 1 tsp vanilla. 1 1/2 cups AP flour. 2 tsp baking powder. 1/2 tsp baking soda. 1/2 tsp salt. 1/2 tsp cinnamon. 1/2 cup butter milk. 2/3 cup chopped apples. 1) Preheat oven to 350 degrees. Line your cupcakes pan with liners. 2) Mix in the flour, baking powder, baking soda, salt and cinnamon, set aside. 3) Cream together the butter and sugar. One at a time, mix in the eggs, add the vanilla. Beating well after each addition. 4) Slowly blend 1/3 of the flour mixture into the creamed mixture, then 1/2 the milk, another 1/3 of the flour, the remaining milk, and the remaining flour, scrape the sides of the bowl occasionally throughout this process. 5) Gently fold in apples, do not over mix. 6) Spoon in each prepare cupcakes liners 3/4 full. Bake for 17-20 mins or until a toothpick comes out clean. 7) Leave in pan for 3-4 mins before removing to a wire rack to cool completely. APPLE FILLING (for 2 recipes of cupcakes)--- 2 medium apple, chopped 2 tbsp butter 2 tbsp sugar 1/4 cup brown sugar 1 tsp lemon juice 1/8 tsp cinnamon 2 tbsp water mixed with 1/2 tbsp corn starch 1) In a medium pan, melt the butter on medium-high heat. 2) Add the apples, sugars, lemon juice, cinnamon and stir. Cook until bubbling, about 5 mins. 3) Add the cornstarch mixture and bring to bubble, cook for 1-2 mins until thickens. CREAM CHEESE FROSTING---2 (8 oz) packages cream cheese, softened. 1/2 cup butter, softened. 2 cups sifted powder sugar. 1 tsp vanilla extract. Cream together the cream cheese and butter until creamy, Mix in the vanilla, then gradually stir in the powder sugar. Add more powder sugar if you like your frosting more sweeter, 1/2 cup at a time....I just like mine not overly sweet!! I use store bought caramel sauce.

Hi! Yes me too! Making them right now.... but had the same question!! Where does the apple filling go?? Thanks!

Ahhh.... now that I look closer at the picture it looks as though the center of the cupcake is cored out and apple filling in the middle right under the icing.... am I right? Please help! :-)

Yes, you are right. Or if you want to cut time you can just pile the filling on top of cupcakes and pip frosting on top and drizzle caramel sauce. I use store bought caramel sauce and use my home made cream cheese frosting.

I just edit the recipe to include the cream cheese frosting, please feel free to check it out!!

hi. should make a hole in the cupcake for the filling?

07/15/2014 Flag

Hi Princesas, I did not make a hole in the cupcakes, I just pile a spoonful of apple filling on top of the cupcake and pip frosting on top of it. Since the cupcakes will come out flat top, it works fine to hold the filling on top (and save time too). Also these are super delicious cupcakes...I don't want to waste any of it!! But if you would like to have more apple filling inside the cupcake, please feel free to make hole for it!!
