What advice would you give someone starting this project?
Using a hairdryer to gently soften the sugar if it starts to go hard while you are still working with it. Not too much or it will melt completely!
is that Isomalt?
No, its actually just sugar, water & food colouring boiled up to the hard boil stage.
Sorry...I meant to say hard ball stage!!! Too early in the morning for my little brain!
