What was your inspiration?

Peter Reinhart and his breads shown during the class.

What are you most proud of?

That the breads had more irregular holes than the ones I made previously, that they were bouncy but crunchy outside, and of course, that the fact that they were the labor of love.

What advice would you give someone starting this project?

Patience... really!

Thanks! I actually have done many Gluten-Free breads, but none so far that I'm satisfied with. It's a different animal altogether, IMO, just because of the science behind it. Concept is the same. Recipes are all over online - you should pick the simplest one & work on it 'til you master it. GF biscuits are fairly easy & always come out well, but I just don't have the recipe here. Good Luck!
