Share a little about the materials, processes and techniques used to create this cake: I made this at a cake class - highly recommended!! Unfortunately I cannot mention all the how-to details. The body and head is made out of sculpted cake. The feathers, tail and beak is made out of modeling chocolate. The use of armature allows it to stand on one foot.

What advice would you give someone starting this project? Sign yourself up for some professional cake classes - its worth the money!

Working with sculpting chocolate easier then fondant and it seems to hold its shape better too. Any advise.

i really like working with modeling chocolate. The key to it is not letting it get too warm! Learn to handle it less to keep it cool. I like to mix my fondant (homemade) with modeling chocolate, sometimes as much as a 1:1 ratio. I will especially do this when covering a cake like this. It's much easier to smooth/blend the seams - plus more working-time. I use modeling chocolate in my molds, tapits, borders around cakes. It takes on color well - both gel color and petal dust (not so much air brushing though). Modeling chocolate can be a little finicky to make but its quick & easy. For a bright white modeling chocolate I'll add some Titanium Dioxide.

I am amazed at your cakes.Just hoping that ypu have ypur very own cake decorating school or at the least alot of people ording cakes from you.You are amazing.Wish you were here on Montreal Canada as my instructor,keep up the good work

victoriasnanny, i dont have a decorating school but who knows maybe some day! I'm only about 4 hours away from the Canadian boarder - Niagara Falls! I do keep pretty busy as a hobby cake decorator. Thank you all for your wonderful comments.
