White cake with Raspberry Italian buttercream. Chocolate cakes frosted and filled with chocolate ganache. Cakes were covered with Massa Ticino Tropic Fondant All seashells, pears, and seahorses were made with Modeling White Chocolate. White chocolate were E Guittard chocolate.
What are you most proud of?
I made my own molds for all the seashells.
The seahorses figures were free-hand modeling.
What advice would you give someone starting this project?
After taking Lauren's Modeling White Chocolate class, I love it so much. Her instruction is very clear. I am learning making the figures with using her Modeling Chocolate recipe.
Do not overmix. I threw one batch away because I did overmix.
