That it was 28 degrees C on saturday and that the cake pops didn't fall off due tot he feat!

What advice would you give someone starting this project?

Invest in chocolate melter!

Ooh, one last thing. I bought electric chocolate melting pots... Sorry, cant remember what they are called. Takes about 45 minutes to get melt or choc up to temperature but then keeps it at right temperature.

I prefer using Callebaut chocolate to dip as it is delicious and you get great coverage with it, easier than using candy melts. Candy melt is much better in hot weather so depends upon where you live and season as to what you use. If using candy melt i will thin down with paramount crystals. I take a stick, dip it 1/8 inch into the choc and then push it half way into the pop. This then goes back in the fridge, after 5 minutes when the choc and the pop are set on the stick then thats when i dip. Dip straight in, don't rotate the pop as this can pull it off. If the dip isnt deep enough then use a spoon to gently cover the remaining part of the ball. Lift the pop out. If you are holding the pop in your right hand then tap the back of your right hand with your left to shake of the excess choc. Dont tap the stick directly as this can shake your pop off. Depending on your design either decorate immediately (so that decoratns stick to the choc covering) or wait until it has set and use a small amount of choc on your decs as glue. Hope thiis makes sense. Once you have the hang of it, they are easy to make, but they are very time intensive and someting i dont now promote as you cant charge enough to cover your time.

Magnificent!!! Would you be able to tell me where to get proper instructions to make cake pops? The only method I learned was with Wilton candy melts in the microwave and they are always clumpy and never even round! I'd be eternally grateful for any advice!!!!

Sorry, something strange going on with my ipad. I make them slightly differently from Bakerella in that I make my cake from scratch and butter icing from scratch. This is because, in the uk, many of our packet mixes and ready made frosting is very synthetic tasting. ready

so, i make up a regular pound cake, wait for it to cool, and then slice off the crusts. I then mix 2 parts cake with 1 part butter iicing (butter and icing sugar). I will stick this mixture in the fridge to cool down (often overnight). I then use a 1/3 or 1/4 cup to scoop out mixture. This is balled in your hands and put back in the fridge.

Normally I use Callebaut chocolate as you can get a great finish, but it was hot on the day I made them so used candy melt, which I find far more difficult to work with. In this case I used a mix of white, peach and nutterscotch candy melts (I prefer Merken's). I thinned the melt with paramount crystals and double dipped.
