I used Ken Forkish's methods here along with Reinhardt's. This upload shows a boule that was baked seam-side up without scoring for an organic bloom and two boules proofed in towel-lined bowls seam-side down and scored. I have made a ton of tests in the last few weeks. The course is definitely addicting.
