I prepared a roast chicken for Christmas dinner and employed Molly`s technique of combination roasting. I made one modification of brining the Chicken first. Afterwards, I did exactly what Molly did to her chicken. Although the skin was not as crisp, the meat was moist and extremely flavorful. The lemon and onion created a fantastic taste!

Brining does add great flavor- it also plumps up the skin so it doesn't get as crisp. Sounds like a lovely Christmas dinner.
