clear acetate for making chocolate ruffled fans. Bench or wallpaper scraper for ruffles.

What was your inspiration?

I took Alice's chocolate class in Berkeley California in 1996, her talent inspired me and her patience and time spent with each class member was so helpful. I have signed up for her Craftsy class just to refresh the steps for making this cake again.

What are you most proud of?

Finally being able to make these beautiful chocolate ruffles, I had seen them done before but found Alice's method much easier to follow and create.

What advice would you give someone starting this project?

I checked "Advanced" on difficulty of completion of the cake and ruffles but for some p[eople it may be easier or they catch on quickly. Alice does explain everything step by step so I have no doubt anyone can recreate the design if they give themselves time to practise.

A finished chocolate wrapped cake with chocolate fan ruffles from Alice Medrich's book "Cocolat" I took her class in 1996 at Sur La Table in Berkeley California. These ruffles can make the simplest cake into a glamorous dessert.
