The cake that Paul demonstrates feeds about 200 people and contains nine 2.5"-high round cakes ranging in width from 6" to 10" (15-25 cm). He uses about 6.5 pounds (3 kg) of modeling chocolate and 5 pounds (2.25 kg) white chocolate. He uses another 19 pounds (8.6 kg) of chocolate in the ganache and about 2.5 pounds (1.2 kg) of fondant. But you can make whatever size of cake you like! The techniques in this class will work at any scale.
