Turn your next creation into a timeless masterpiece with everyone's favorite icing: Buttercream! With Roland Winbeckler, the father of American cake decorating, you’ll make perfect decorating icing, roll your own parchment piping bags and even tint the icing right in the bag! Start with simple shells, swags and scrolls before diving into rustic rosettes, flawless filigree and dramatic drop strings. Also included is a buttercream technique for the hottest thing in cake these days: ombré ruffles. Roland will show you how to cultivate your skills on a practice board before heading to the turntable.

Lesson 1. Getting Started & Making Icing

  • Meet your instructor, Roland Winbeckler, and learn his secrets for making buttercream icing, perfect for piping.


Lesson 2. Piping Bags & Tips

  • Roland leads an in-depth discussion on the variety of piping tips and piping bags available to decorators and then teaches you piping basics: Shells, swags, borders and roses.


Lesson 3. Embellishing Shells

  • Take the basic shell and learn how to add over-piping to create incredibly rich and delicate borders.


Lesson 4. Fancy Scrolls

  • Simple scrolls turn into works of art as Roland demonstrates how to add layers of detail and then incorporates scroll designs onto a cake.


Lesson 5. Ruffles, Petals & Rosettes

  • Pipe upward and downward facing ruffles and learn how to create a beautiful and trendy ombré cake using ruffles or piped petals.


Lesson 6. Line Scrolls, Filigree & Lace

  • Learn to incorporate filigree accents, corner scrolls and lace into your cakes as you learn to pipe fine, delicate lines.


Lesson 7. More Filigree Methods

  • Advance your filigree education as you learn to make, apply and pipe on top of a filigree pattern. Then transfer that design to your cake.


Lesson 8. Piping Drop Strings

  • Learn to create flawless piped swags and vertical drop strings as you finish your buttercream piping adventure.
