Advanced Cake Sculpting

with Mike McCarey
Advanced Cake Sculpting
Learn how to sculpt a cake that will turn heads! Cake artist Mike McCarey shares his secrets for constructing and carving a truly sweet caricature.

With wit and wisdom, Mike will teach you how to sculpt your cake and decorate it with lifelike features made out of fondant and modeling chocolate, using reference photos of your subject. The oversized head offers the advantages of easier carving, lots of cake to serve, and best of all, a light-hearted and humorous way to celebrate your subject. This cake-decorating class also includes some serious cake-stand construction. You’ll learn how to build a sturdy and customized support structure before stacking layers of delicious cake reinforced with buttercream (recipes included!).

Lesson 1. Meet Mike McCarey

  • Meet your instructor, cake artist Mike McCarey, owner of Mike's Amazing Cakes, and learn about this advanced class.

Lesson 2. References & Patterns

  • Mike walks you through the process of creating a bobblehead pattern. He’ll also explain the importance of keeping references nearby as your sculpt.

  • Head, shoulders, knees and toes — all in cake. Mike walks you through the process of building your bobblehead's structure.

Lesson 5. Sculpting the Cake

  • Learn to round off the head, carve the cake body and fix any mistake with Mike's expert advice. You'll finish with a perfect crumb coat.

Lesson 6. Refining the Face

  • Master amazing life-like facial details as you sculpt the head, build up the cheeks, brows and mouth and add a nose and eyes.

Lesson 7. Adding Fondant

  • Mike’s hands-on crumb-coating technique comes into use as he rolls out and drapes fondant over the head and face before adding realistic life lines.

Lesson 8. Adding Ears, Brows & Hair

  • The attention to details continues as Mike shows you how to make ears, facial hair, eyebrows and how to use a template to make a head full of fondant hair.

Lesson 9. Legs, Shoes, Pants & Jacket

  • Become an expert body builder as Mike demonstrates how to add legs, shoes, pants and a chef’s coat, too.

Lesson 10. Arms, Hands & Final Details

  • Give yourself — or at least your cake — a hand as you learn to add arms, hands and accessories before pulling out the airbrush to complete the finishing touches.

"A fantastic class from the absolute master of magnificent cakes. It is long and detailed. From planning and structure to the smallest element of the design, no corners are cut and it all flows thanks to Mike's excellent style of teaching, relaxed manner and humor. The design can easily be adapted to other people structures, bobblehead or not, and the range of skills used in this complex cake will be useful for many other projects."
