Melt-Free Fondant Ice Cream Sandwich Cupcake Topper Tutorial

There are very few things better than ice cream in this world, so if I had to pick, I would say that a delicious cookie ranks very high on that short list. Combine the two, forming a mouth-watering ice cream sandwich, and you may have climbed a few more steps towards the top. Now, incorporate cupcakes with ice cream sandwich fondant toppers into that mix and you will surely have the sweetest treat around!

Follow the simple steps of this ice cream sandwich fondant tutorial to create adorable, melt-free cupcakes!

Ice Cream Sandwich Fondant Tutorial

 

Materials:

  • Fondant (brown, tan and white)
  • Fondant rolling pin & 1/8″ guide rings
  • 1/4″ wooden dowels
  • Water/edible glue and brush
  • Vegetable shortening
  • Scalloped medium-sized rectangle cutter (or straight)
  • Small and large square cutter
  • 7/8″ circle and scalloped circle cutters
  • Large modeling stick
  • Knife tool
  • Small ball tool
  • Round decorating tips #5 and #7

Fondant Ice Cream Sandwich step 1

Step 1:

Roll out brown fondant with the rolling pin and 1/8″ guide rings. Cut out two medium-sized rectangles with either a scalloped or regular rectangle cutter to make the cookies.

Step 2:

With the large modeling stick, begin to indent circles into one of the brown rectangle cookies, making sure to do it in a regular pattern throughout. Set both cookies aside to dry and stiffen.

Step 3:

Roll out white fondant thick with the rolling pin and wooden dowels as guides.

Step 4:

With the large square cutter, begin to trim the white fondant into a rectangle, slightly smaller than the cookies, to form the ice cream middle.

Note: You can also easily utilize a rolling pastry cutter or a small spatula to trim the white fondant rectangle.

Step 5:

With your fingers dipped in a bit of vegetable shortening, smooth and round out the four corners of the rectangular ice cream.

Step 6:

Once the cookies are dry enough, assemble the ice cream sandwich with the pattern on the very top and glue them together. Make sure your cookie rectangles are stiff enough to hold their shape to avoid the corners of the top layer droop over the sides.

Step 7:

Roll out brown fondant with the rolling pin and 1/8″ guide rings. Cut out two 7/8″ scalloped circles to make the cookies. Again, if you don’t have a scalloped/fluted cutter, you can just as easily utilized a regular circle cutter.

Step 8:

With the large modeling stick, begin to indent circles into one of the round cookies, making sure to do it in a regular pattern throughout. Set both cookies aside to dry and stiffen.

Step 9:

Roll out white fondant thick with the rolling pin and wooden dowels as guides. Utilize the 7/8″ round cutter to punch out a circle to create the ice cream center.

Step 10:

With your knife tool, make long diagonal indentations around the perimeter of the ice cream to simulate swirls.

Step 11:

Once the cookies are dry enough, assemble the ice cream sandwich with the pattern on the very top and glue them together.

Step 12:

Roll out tan fondant with the rolling pin and 1/8″ guide rings. Cut out two circles with the 7/8″ round cutter to create the cookies.

Step 13:

With the small ball tool, begin to make irregular indentations on the surface of the cookies, as well as the side perimeter, to make them look like baked cookies.

Step 14:

Roll out brown fondant with the rolling pin and 1/8″ guide rings. Utilizing round tips #5 and #7, punch out several circles. You can also pinch off some smaller circles with your fingers as well. Roll the circles into little balls, then flatten them a little to begin creating chocolate chips.

Step 15:

Glue the chocolate chips in various sizes onto the top of one of the cookies.

Step 16:

Roll out white fondant thick with the rolling pin and wooden dowels as guides. Utilize the 7/8″ round cutter to punch out a circle to create the ice cream center.

Step 17:

With the large modeling stick, make scratches and indentations around the perimeter of the ice cream to give it a rougher, ice cream texture.

Step 18:

Assemble the ice cream sandwich with the chocolate chip cookie on the very top and glue them together. Allow the fondant toppers to dry thoroughly.
